FWIW, I did this last year and moved to a VPS2A - or
whatever they call the cheapest VPS2- the server gets
a ton of spam in addition to regular email, with both
Spamassassin & ClamAV running, and rarely breaks above
.01 for server load. So you might save a little there
- you can always upgrade if needed.

This is real tricky -- I have never been able to get
the old server to recognize that mail which originates
on the server needs to be delivered off the server. I
just solved the issue by changing the addresses that
programs like the mail forms deliver to. For example,
the new server is named mail.domain.com - while MX
records are set to recognize that domain.com needs to
deliver to mail.domain.com, but on the old server, I
need to either (a) configure the form to send to
user@xxxxxxxxxxxxxxx rather than user@xxxxxxxxxx, or
(b) configure virtmaps/aliases on the old server to
forward mail addressed to user@xxxxxxxxxx to
user@xxxxxxxxxxxxxxx
