I have used the following technique successfully:

If you're interested in archiving only outbound mail, you might be able to
use recipe 6.8 ("Filtering Outbound Mail with procmail") in Craig Hunt's
"Sendmail Cookbook" (O'Reilly, 2004).
If you google a bit, I seem to recall seeing some milters to archive all
mail.
