BTW : my "quick" solution was really a "quick and dirty" fix. There MUST be a better, long-term way...

Couldn't SpamAssassin or ClamAV help with this? I have them installed on the server. To be honest, I've been ignoring spam solutions all this time and it appears that I am now forced into facing it. ;)

Welcome to "Hell World" - actually, you've been lucky to get away with it so long. SA should pick up mail from known spammers and identify key aspects of standard spam mails. You can get SA to trash them or archive for checking later (nobody actually checks after the first few days, so you need to watch the users' junk mailboxes or space gets burned up uselessly). Or you can get into "Procmail Land" and start building more finely-tuned recipes with many more delivery options.

I would warn you that we've been seeing lots of really cut-down spams recently along the lines of:-
"Best medz - call 0123456789"
Not much for SA to work with, there.
So these get through - in annoying numbers.

However, if you block 90% of the spam, then someone's going to be happy.

(Closing down, now - goodnight everyone)
Andy
