Mailman version 2.1.4 lets you set filters based on the
headers of incoming mail. You want to look under the
sections:

Privacy Options/Spam filters

and

Content Filtering

on the list administration page.

I don't know when each feature came in, so these may or may
not be available on previous versions of Mailman.
