[vps-mail] Separate Mail Server

I have been thinking more and more about setting up on VPS2 that is
dedicated to doing just mail (POP, Webmail, mailing lists). I seem to
remember Abigail saying that she has done this and I imagine others have
also. So I have some questions, if you don't mind.
1) Did you need to (or feel the need to) disable any services on the
dedicated mail server? (like webserver)
2) Did you need to (or feel the need to) disable any services on the web
site servers? (like incoming mail server)
I have thought about disabling services, but on a web site server I know
that scripts will still need to be able to send mail out and on mail
servers people will still want to access mail through the web.
3) Is there anything special I should consider doing on either a web site
server and or mail only server that might help optimize performance for
each?
