I didn't mean to tell you that you *should* have done that; I've never
done it and I know I've seen a pile of viruses hit the server and just
deleted them. I was hoping someone on the list had some experience
doing it so we can make it easy for those who desire to.

Procmail recipes are just as effective for known viruses, of course,
for those using procmail for that purpose. General heuristics (such
as virussnaggers and the Sanitizer) also catch a lot of virus material
without the use of signatures.
