I have generally used mailertables to rescue addresses that are
"trapped" on the local server (where sendmail "thinks" they should be
delivered locally). I have (for example) used the mailertable to
assign a non-local mailer (such as esmtp) and send them off to some
other mail server instead.

I was hoping, on the contrary to allow *some* domains to use procmail via the mailertable, others not. On this system, procmail is called for several addresses using lots of different rc files. This is growing too complex. I don't think I want to have procmail as the sys wide mailer on this particular VPS1 server. I'm not yet sure how procmail would act in this config but I wanted to experiment.
