I wish I could think in procmail expressions like you do, Scott! Seems like no matter how many years I've used it, I can't do better than modify others' work to my needs. Still, great tool and great help from this list, thanks.
This said, I log ago changed the '*' to an 'S' in SA and used the number of 'S' (as in "* X-Spam-Level:.*SSSSSSSSSS" for over 10) but in my experience, it often happens that suddenly a false positive from a high level businesss person comes through so in my experience (and ONLY mine) the idea of having two spam groups (Shinola and Sh**), procmail can easily classify the two, but only I can tell the difference :)
