Hmmm... My VPS listens on 587. (doesn't yours?)
Try the following from some other box:
% telnet my.vps.domain.com 587
and see if it responds. (Mine does.)
I think that (because it is standard now), sendmail adds 587 by
default to all sendmail.cf's--without requiring that you specify it in
your mc file. (If you specifically want to disable 587, I think you
have to specify it in the mc file. I forget the exact syntax for
disabling 587 ...)
