Once the domain is not local to the old server sendmail will
check the MX record and deliver mail correctly to the new server. If
FormMail works though sendmail then you're fine.

Once the domain is not local to the old server sendmail should
refuse to accept any mail for the domain. I believe if you add the domain to "~/etc/relay-domains" on the old server, any mail that does arrive will
be accepted and queued for delivery to the new server. That could take
care of people using old DNS issues. [See also http://www.viaverio.com/index.cfm?page_id=505] I thought ViaVerio had a
document explaining how to use twist to return an error to a sender
trying to deliver mail to the old server but the closest page I found
was [http://www.viaverio.com/index.cfm?page_id=561].
