Great information, thank you for your feedback.  Your reasons sound like 
the reasons I am wanting to do this as well.

One other thing, on the regular servers, since there are programs that 
will be sending mail, I will keep that on.  How about for receiving mail. 
Is there a way to just turn off even the ability to receive mail on those 
servers so that they aren't even bothered by the attempts?  Or is 
receiving tied into sending with sendmail also?
