[vps-mail] spam under the radar #1 - garble text

Example #1: Looking at the follow email it is clearly spam.  It came in to my email under my spam filtering radar.  Here is what puzzles me - when I look at the spam on the server the text is all garbled.  But when read by my email client it is fairly readable but obvious written badly.  Does anyone know what is happening?
